Gotta Love a Fresh Lemon Cake
In the convenience world we live in now and having beautiful cafes and restaurants at our doorsteps, it's so easy to just add a side of cake or slice to your coffee order. Right now with all these extra hours in the day, I have the time to bake something myself. I have the time to hunt down old family recipes, to bake them and to share with them with my family (if they are lucky). As a goal during lockdown I have decided to bake something at least once a week.
Today we have a delicious Lemon Cake...
This cake brings back childhood memories for sure. My mum has always been great at baking. Her super tasty Lemon Cake was a definite favourite in our household while I was growing up so I decided to try out her recipe myself, and it tastes just like I remember....This recipe is super easy, doesn’t contain too many ingredients and will have you licking your lips afterwards ! I have been loving this with a hot chocolate watching the evening sunset.

Lemon cake recipe
1 cup of flour
3 tsp baking powder
2/3 cups of sugar
2 eggs
120g butter softened
4 tbsp of milk
1/4 cup lemon juice
Zest from 1 lemon
Icing
1 1/2 cup Icing sugar
1/4 cup lemon juice
Zest from 1 lemon
Method
1. Pre-heat oven to 180 degrees.
2. Cream butter and sugar together in a bowl. Once mixed together add dry the ingredients. Whisk in the milk and eggs.
3. Add lemon juice and lemon zest (be sure not to mix too much as mixture can curdle)
4. Once all mixed together, line or spray a 23cm cake tin. Pour mixture into tin.
5. Put in oven for 15 to 20 minutes or until golden on the top and cooked all the way through.
6. For icing add all icing ingredients together in a glass measuring cup. Mix well until smooth or to the consistency you are after. If you want a thicker icing just add more icing sugar until you are happy with your result.
Serve with Coconut Yoghurt !
