An Old Family Favourite - Weetbix Slice

Weetbix slice
This is an old family recipe that is always a hit and doesn’t last very long! If you are making this for a big family I would recommend to double the recipe! 
Ingredients:
8 weetbix
1 cup sugar
1 Tablespoon cocoa
2 cups flour
2 teaspoons of baking powder
250g melted butter
Icing:
2 cups icing sugar
1 Tablespoon of cocoa
1 Tablespoon of butter
Method:
Pre heat your oven to 150-180. Crush up all weetbix in a large bowl. Then add flour, sugar, cocoa and baking powder and mix together. Melt your butter and add to the dry ingredients. Once your mixture is combined it will become thick and crumbly. You may have to use your hands to mix all ingredients well. Line a square/rectangle tray with baking paper and pour mixture onto the tray. Push firmly until you get an even base about an inch thick. Cook your slice for 15 minutes. If it is too soft then keep in for another 10 minutes. Once cooked take it out and let cool in preparation for icing. For the icing mix icing Sugar and cocoa together and then add little amounts of water at a time until you get it to the consistency you want. I like my icing to be on the thicker side. Once happy with your icing then pour onto your cooled slice. Cut into squares of your choice and enjoy!
